Local Dorset thick end of belly pork, cut from the lower park of the belly, it is an alternative cut for belly as it is also a fattier cut of meat which breaks down once slow cooked, and is full of flavour. It is a great cut for roasting, especially once scored as it is guaranteed to give you crackling!
